Maple Coconut Pie
Ingredients:
For the pie:
1 cup coconut
1/3 cup melted butter
½ cup sugar
1 unbaked pie shell
1 cup Very Dark maple syrup
½ teaspoon vanilla
3 well beaten eggs
For the maple whipped cream:
whipping cream
maple sugar
Directions:
For the pie: Preheat oven to 350 degrees. Melt butter. In a large bowl add sugar, coconut, eggs, maple syrup, butter and vanilla. Mix well. Pour into pie shell. Bake for 45 minutes.
For maple whipped cream: Pour whipping cream into a bowl. Mix with a whisk (or electric beater) and add maple sugar until it looks like whipped cream. Serve and enjoy!!
