Maple Oat Bread

Ingredients:

1 cup old-fashioned oats

1 cup boiling water

1 package active dry yeast

1/3 cup warm water (110-115 F)

1/2 cup maple syrup

2 teaspoons canola oil

1 1/2 teaspoons salt

3 1/2 cups all-purpose flour

1 egg white, lightly beaten

2 tablespoons old fashioned oats

Directions: 

In a small bowl, mix 1 cup oats and boiling water. Let stand until cooled to 110-115 F. 

 

In a larger bowl, mix yeast and warm water; then add maple syrup, canola oil, salt, oat mixture, and 2 cups flour. Mix in standing mixer until smooth. Stir in enough flour to form a soft dough. Place in greased bowl, turning once to grease top. Cover and let rise until doubled.

 

Punch dough down. Shape into flattened 9-inch round loaf and place into greased deep-pie plate. Cover and let rise again, about 45 minutes. Brush top with egg white and sprinkle with remaining oats. Bake at 350 F for 30-35 minutes.
